This ancient variety, known to the Romans as Apiana for its ability to attract bees, reveals layers of compelling complexity in our Clare Valley expression. The restrictive soils force the vines to dig deep, concentrating flavors and creating remarkable textural weight. Each sip unfolds with pristine clarity - white peach and quince meld with mineral undertones, while the signature beeswax character builds to an almost ethereal finish.
