"100% Sauvignon Blanc farmed organically though not certified & machine harvested from the Freeman vineyard in Hilltops, NSW. Wild fermented through to dryness in stainless steel when a small amount of unfermented juice was introduced back into the wine to commence a secondary fermentation & subsequent carbonation. Bottled by hand, the resulting wine remained undisgorged & preservative free. Lemon sherbet, fresh cut grass, nashi pear & cream. Built to pour!" - Winemaker Notes
