"Ten years in a Spanish Oloroso Sherry cask is a significant achievement for an Australian whisky, as local wine casks are much more common, and most are much younger. "Sherry" can be a confusing term too, because companies still use the word to refer to Australian sherry-style fortified wines, which are actually "Apera". Here it's the real deal: Hellyers importing the cask from Jerez, where sherry has been made for centuries. This whisky displays all the bright fruit of a good Spanish fortified on the nose, again with that lovely orange cake note at the fore, backed up by creamy marzipan. It smells delicious, and it's not too oaky at 10 years in the Aussie climate.
