Egly-Ouriet Les Prémices Brut NV - $135 per bottle ; $149 RRP

Reflecting what is planted in the vineyards, Les Prémices is an equal blend of Pinot Noir, Chardonnay and Pinot Meunier. The vines are, on average, 40 years old and are rooted in clay, sand and sandstone over chalk bedrock—a soil typical of the Massif de Sainte-Thierry. As always, the classic Egly manifesto applies here—old vines, low yields, hand harvesting of fully ripe fruit, no inoculation, long lees aging, no fining or filtration and low dosage, etc. One difference here is that the wine was fermented and aged exclusively in tank. While the first release was drawn from a single vintage (2016), this release is a 2017 base with 60% reserve wine from the intense, low-yielding 2016—so you can expect something more complex and layered from this release. The wine spent 36 months on lees and was disgorged with two grams per litre.

Wafting from the glass with aromas of pear, crisp stone fruit, wheat toast and citrus oil mingled with hints of white flowers and praline, it's full-bodied, layered and concentrated, with tangy acids, terrific mid-palate amplitude and an enlivening pinpoint mousse. It's a lovely wine, bursting with aromas of fresh bread, citrus oil, crisp orchard fruit, praline and subtle hints of clear honey and exotic fruits. Full-bodied, layered and textural, it's concentrated and incisive, with a pinpoint mousse and a long, saline finish. "Francis Egly's 2012 Brut Grand Cru Millésime is predictably brilliant; but it's also a serious, structured wine that will need time to unwind. Mingling notes of citrus oil, pear and stone fruit with hints of freshly baked bread, praline and baking spices, it's full-bodied, deep and multidimensional, with huge concentration and a taut, layered core. Built around a racy spine of acidity and prodigious reserves of chalky extract, it's long, precise, and remarkably fine-boned and elegant for such a powerful wine. Make no mistake, this is one of the wines of the vintage, but—like the 2008—it will demand patience.
